Mix It! Cook It! Serve It!
Paneer is a subtly flavoured Indian cottage cheese. This quick dish is a vegetarian favourite with aromatic coriander, garlic and peppery flavours. Serve it up as snack with coriander-mint chutney, chuck into a quick wrap with salad and mayo, or create a smooth Paneer Tikka Masala curry by simply adding a creamy tomato sauce.
Shopping List
- 250g Paneer, chopped into small cubes
- 2 tablespoons Oil
- 4 tablespoons Greek-style yoghurt (10% Fat)
Instant Indian in 3 Steps
Mix it! Mix all the ingredients with Spice Mix in a large bowl, cover up and leave to marinade for at least 30 minutes.
Cook It! Spread the paneer over a foil-lined baking tray. Bake for 10-15 minutes at 200C/400F/Gas Mark 6, turning the pieces over once, until golden brown and softly charred at the edges. BBQ or Cook in pan (choice is yours).
Serve It! Serve hot with a cucumber raita or a coriander or mint chutney. Serve as a wrap by warming a tortilla, and adding the paneer, salad, mayo and a side of chips.
Alternatively, Make a curry by adding paneer to a creamy tomato sauce, made with one finely chopped onion, 3 tomatoes and 60ml milk along with ginger-garlic paste, chilli powder, salt and sprinkle of garam masala and serve spooned over rice.
Top Tip – make a quick Cucumber Raita
Mix 100g plain yoghurt with a quarter of a peeled and grated cucumber. Stir in ½ teaspoon salt, ½ teaspoon cumin and a handful of finely chopped coriander.
